- 1 chicken breast
- 50 grams mozzarella
- 6 leaves fresh basil
- 1 Roma tomato
- 1 onion
- 1 red pepper
- Kosher salt
- 1 tablespoon olive oil
- Filet chicken breast and place on sliced onions rings on foil-lined with parchment paper.
- Season chicken with salt and pepper and top with chopped tomato, basil, and mozzarella.
- Smoke at 350°F (177°C) for 30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
