Honey Butter Jalapeño Cornbread

SERVES: COOK TIME: 0 - 30 MIN | METHOD: Baked

Ingredients

  • 3 1/2 teaspoons baking soda
  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup honey
  • 1 large egg
  • 1 large jalapeño (chopped)
  • 1 cup milk
  • 1 teaspoon salt
  • splash of bourbon (optional)
  • 2/3 cup sugar
  • 1 stick butter
  • 2 sticks butter (melted)

Instructions

  1. Set grill to 400°F. On a Gravity Series grill, it should take only around 12 minutes to reach temperature.
  2. Mix together all dry cornbread ingredients into a large mixing bowl. Sift for a smooth batter.

                    INGREDIENTS

  • 1 cup Flour
  • 1 cup Cornmeal
  • 2/3 cup Sugar
  • 1 teaspoon Salt
  • 3 1/2 teaspoons Baking Soda

3. Add all wet ingredients to bowl and mix to combine.

                   INGREDIENTS

  • 1 stick Butter
  • 1 Large Egg
  • 1 cup Milk
  • 1 Large Jalapeño (chopped)

4. Pour batter into a greased cast-iron skillet.

5. Place on middle rack of grill to allow for even air flow. Bake for 25 minutes at 400°F.

6. While cornbread is baking, make honey butter by whisking together the following ingredients:

                     INGREDIENTS

  • 2 sticks Butter (melted)
  • 1/4 cup Honey
  • Splash of Bourbon (optional)

7. Remove cornbread from grill once it has a golden brown exterior. Drizzle on honey butter, slice and serve!
